Momofuku Chili Oil Fried Egg over Garden Fried Rice
Fried rice is a great go-to recipe. Once you get the technique and seasoning down, you can alter it for any veg or meat you’ve got on hand--perfect for summer when you're harvesting from the garden or in the winter when you’re relying on what’s in the freezer! The star of the show here is the Momofuku Chili Crunch Oil. I finished up my rice, then fried an egg in a hot pan, using the chili oil as the cooking oil. This resulted in a crispy, crunchy, spicy fried egg with a gooey yolk ready to dribble through the rice beneath.
Fennel Saffron Lobster Roll
Wouldn't be a summer in Maine without a lobster roll (every week?!). Almost anywhere you look you can find one, either chilled with mayo or warmed with butter. When we relaunched our Fennel Saffron Sea Salt, it quickly become a favorite for seafood. We switched to grinding the saffron into a fine powder to create a pink salt with cracked fennel seeds + some whole saffron threads tossed through it. Though red/pink itself, saffron turns everything around it a deep golden hue, which was really amplified when melted into butter and tossed through the chunks of lobster.
Potato Salad
Potato Salad is certainly a dish up for debate. Some like it warm, many prefer it cold, I like it most at a barbecue where it could be considered sun-kissed (aka suspiciously "room temp", not necessarily recommended). This one is simple and best enjoyed after a few hours of marinating. The vinegar begins to almost pickle the onions, dialing down the sharp onion flavor and keeping them crisp.
Everything Sandwich Bread
Ideal blend? A blend that can go on everything. Ideal bread? Bread you can serve with everything. With this recipe, you can have a fluffy, seeded white bread in just about 3 hours (or quicker with a mixer!). I went on to turn this into a yummy Egg Salad Sandwich, a BLT, crostinis for a cheese platter, and some croutons with the ends! Only regret? Not making another loaf.
Bloody Mary Mignonette
When I see Celery Salt, I think of two things- Lobster Rolls + Bloody Mary's! We've got our Southwest Bloody Mary Cocktail Recipe here in the Recipe Box, but how incredible would it be if each slurp of a fresh raw oyster had a Bloody Mary shot in it? Yum! While oysters are my go-to, you can find a collection of other ideas on how to use this mignonette at the end! Happy shucking!
Roasted Sweet Potatoes with Chili Aioli, Avocado, and Pickled Chilis
We had so much fun partnering with Chef Mike Kubiesa (co-author with Kristin Cavallari of True Comfort and True Roots) on this recipe. Our favorite thing about it? It's restaurant-quality but so doable for home cooks. He used both SKORDO Steak Seasoning and SKORDO Lemon Herb Fish Seasoning in the dish. To quote Mike, "this looks fancier than it is! I know it's a struggle for a lot of people to get quick and healthy meals out for them or their families on a nightly basis - trust me, I get it! My goal is to help you with that." Love it.
Chicken Souvlaki Skewers | Tzatziki Dip
Marinated chicken + Tzatziki are two things that are better with time, so prep this the day before and you have a quick, easy dinner. This one is flexible as it can be baked or grilled. You could even save the leftovers for your next chicken gyros recipe or greek Souvlaki salad.
Steak Tip Wedge Salad | Garlic Pepper Caesar Dressing
Who doesn't love a wedge salad? Sure they can be clunky to eat, but they're refreshing and flexible. Our new Garlic Pepper is loaded with Garlic, Pepper, Brown Sugar, Paprika, Onion, Cumin, Bell Pepper, Parsley--which to me screams steakhouse salad. The coarse cracked pepper crusts beautifully on the steak tips and make this creamy dressing pop! It's very much influenced by Caesar dressing, and by using mayonnaise as the base it comes together in seconds. Make it your own by switching out different cheeses and toppings like blue cheese, bacon, hardboiled eggs, or maybe artichokes.
Crispy Tofu + Broccoli | Garlic Pepper
Crispy, Sticky, Garlic-y. This vegetarian friendly meal is quick and simple, while packing a ton of flavor. Make this one your own by swapping in your favorite vegetables, or serving with noodles instead of rice. Our new Garlic Pepper seasoning is salt-free, making it perfect for asian dishes that use a lot of soy sauce.
Maine Blueberry Chicken Skewers with Yogurt Dip
If you haven't been over to The Makers Galley on Commercial Street in Portland, then you're missing out! We love seeing the wide variety of art, books, and pantry essentials from local makers all in one place. Be sure to keep an eye on their event calendar. Owner Rachel Sagiroglu and Chef Arianna Stefanilo are always whipping up something special- Pajama Brunch on Sunday's and Shop & Shuck Saturday's to cooking classes and tastings. You may see familiar SKORDO jars on their retail shelves and even a well loved test tube rack in the kitchen. We were invited to their opening night where we got to taste some of Ariannas staples- including these Maine Blueberry Chicken Skewers with Yogurt Dip.
Tikka Masala Pie
This recipe is homey, cozy and will warm you up with a nice blend of juicy seasoned chicken and velvety tomato cream sauce.
But what made it ultra special when we made this in Baking It were the spices we used from SKORDO and we think that they made all the difference. We thought of recreating it again with all the spices we used from SKORDO and it turned out be even better.
